My gluten free girl had a hankering for cupcakes.  As much as I resist more small kitchen appliances, we found a mini cupcake maker (like new) at Value Village a few weeks ago.


We used a chocolate cake recipe from a vegan cookbook, just swapping out the flour for our GF mix, and increasing the liquid to make up for the extra thickening power of the GF mix.  

They turned out pretty good and satisfied our sweet tooth.  The best part, though, was the fun in the kitchen with these two!
