A Compliment


Ry has conceded that the gluten free pancakes Kia and I made this morning are pretty great.  "Well, better than those whole wheat ones you used to make, Mom."

It's just my mom's classic pancake recipe, with a couple healthy substitutions.

Golden Pancakes

2 eggs
1 cup GF flour mix
1 1/2 cups almond or soy milk
1 TBSP coconut sugar
2 TBSP oil
3 tsp baking powder
1/2 tsp salt

Mix all things together til batter is lumpy.  Pour onto heated and lightly greased pan.  Cook til puffed and edges are dry.  Flip and cook til both sides are golden.  Enjoy!
